Even if you feel the need to go get a goat you know very well that the goat smell and taste dominates most goat cheeses. However, with this cheese you will hardly even notice the potential strong goat flavor. You will find a mild, creamy, tangy morsel that will melt on your tongue and force you to go-get-even-more-goat. Raw goat’s milk from our growing herd is used to make these 5 lb wheels. The Dutch farmstead method is used and the wheels are aged at least 3 months in our cave. Rarely, 5 month old wheels get released and disappear promptly.
